Bolla revives an icon of Italian wine history, with the 1960s vintage bottle and label for a new Soave Classico with a contemporary feel, inspired by the belief that wine traditions must be upheld.

WINEMAKING METHOD Clusters were destemmed and crushed, then pressed to extract the juice as delicately as possible. Alcoholic fermentation of 100% Pinot Grigio was in stainless steel tanks at temperatures not exceeding 16 °C. The lots were blended in December. The wine was then stored at a temperature of 10 °C to preserve fragrance until bottling.
SENSORY PROFILE Straw yellow with greenish hints, a nose of unmistakable ripe fruit and hedgerow notes. In the mouth the fruit notes are led by peach, expressing maturity and sweetness, nicely underpinned by mineral weave and acid backbone.
RECOMMENDED CELLARING 2 years in bottle, laid horizontally in a dark place at the right temperature and humidity.
FOOD PAIRING Excellent as an aperitif, and equally excellent to accompany fish or shellfish, delicate first courses, grilled fish, white meats, cheeses or herb omelettes.
