Bee’s Knees - prohibition era cocktail
50ml Gin
20ml Verjus
Table spoon of honey

Stir the honey in the shaker with the other ingredients until honey dissolve. Add ice cube, shake and strain into a Martini glass Garnish - Lemon peel

Whiskey Sour - 1870’s American classic cocktail
50ml Bourbon Whiskey
30ml Verjus 20ml simple syrup*
1 fresh egg white
Dash of Angostura bitters

Put all ingredients in a shaker then add ice. Shake and strain over ice in the rock glass Garnish - Lemon Slice

Lemon Drop - 1970’s classic cocktail

40ml Vodka
15ml Triple Sec
20ml Verjus
20ml simple syrup*

Coat the rim of a cocktail glass with sugar and set aside. Put all ingredients in a shaker then add ice. Shake and strain into the sugar coated Martini glass.

 

*sugar syrup

Equal part sugar and water in a pan at low heat and still until dissolved. Let’s chill off the heat and keep in the fridge for use.
