Bolla revives an icon of Italian wine history, with the 1950s vintage bottle and label for a new Soave Classico with a contemporary feel, inspired by the belief that wine traditions must be upheld.
SOME HISTORY The cellar Bolla was born in Soave in 1883, made by Alberto Bolla. The first vintage of this bottle was the 1956. Heading the company, there was Giorgio Bolla, Alberto's son, «a man who foresaw the future 20 years in advance. Dynamic and with a strong attitude to viticulture. Memorable was the vintage 1957, when the best batches of wine of Valpolicella and Soave, had been bought by Giorgio Bolla and that striking news spread immediately in all the markets» (from the book I miei Bolla, by Annagrazia Bolla).
VARIETIES Garganega (100%) from vineyards identified over sixty vintages on Soave Classico hills, which favor small, loose-packed, ripe clusters.
PRODUCTION DISTRICT Vines aged 25 years, selected on the hills in the heart of the Classico district.
ALTITUDE AND ASPECT South facing at an altitude of about 350-450 meters above sea level.
TYPE OF SOIL Soils of volcanic origin and rich in minerals, on steep slopes furrowed by ancient dry stone terracing.
TRAINING SYSTEM Verona pergola.
HARVEST Hand harvested from late September to mid-October, depending on the position of vineyards and their aspecting.
WINEMAKING METHOD Grapes are picked and immediately undergo soft crushing with short cold maceration. Once alcoholic fermentation is finished, the wine is left on the lees until bottling, which is scheduled for the end of the winter.
SENSORY PROFILE These heirloom vines give strong berries with a hard skin, rich in aromas. These features mean the wine delivers floral and balsamic notes. On the palate it's round with a rich texture, notes of candied fruit and yellow plum. Intense and persistent.
RECOMMENDED CELLARING 3 years in bottle laid down horizontally in a dark place, at the right temperature and humidity.
FOOD PAIRING Ideal with pasta and risotto starters, salt cod, grilled fish, poultry.
