The 2021 vintage is made from Shiraz from the Mildura area near the border in northwestern Victoria. According to Shinas Estate, the wine originates from old, low-yielding vines with roots dating back to the original plantings on the property in 1898.
The wine is aged in older French oak barrels. This provides depth and spicy oak nuances, but without overpowering the ripe Shiraz fruit. The result is a big, full-bodied Australian red wine where cherries, strawberries, and darker berries are combined with vanilla, pepper, chocolate, and mocha.
The Guilty is also a great example of George Shinas's unique sense of humor. Alongside his work with wine, George Shinas was a judge, and the courtroom has therefore inspired the names of his wines: the Shiraz is called The Guilty, the Cabernet Sauvignon is called The Verdict, and the Viognier is called The Innocent.
About the area
Mildura is located in northwestern Victoria near the Murray River and is characterized by a warm, sunny, and dry climate. The many hours of sunshine give the Shiraz optimal opportunities to achieve full ripeness and develop the concentrated fruit that characterizes The Guilty.
Shinas Estate works with low yields and leaves the grapes to hang on the vines for a long time so that the flavor has time to develop. This results in wines with high maturity, great fruit concentration, and a rich, generous style.
The first vines at Shinas Estate were planted in 1898. The family has more than eight generations of winemaking tradition behind them, and George Shinas has carried it on in the form of small productions of characterful Australian wines.

Nose: Rich and intense with ripe cherries, vanilla, and distinct peppery aromas. After some aeration, darker fruit and fine notes from the oak aging emerge.

Serving and storage
Best served at 16-18°C in a large red wine glass. The Guilty is a concentrated wine and will benefit from approximately 30-60 minutes in a decanter before serving. This allows the ripe fruit, pepper, and spicy oak tones to open up further.
The wine is ideal to enjoy now for its generous and ripe fruit, but its concentration and tannin structure also allow for further development if stored correctly.
