About the Producer
Domaine de la Meulière, run by the Laroche family, is known for its deep roots in Chablis and an uncompromising approach to quality. The grapes are hand-picked and carefully sorted, and only the best are used in the winery's own cuvées.
Vineyard and Classification
Mont de Milieu is one of the most highly regarded Premier Cru vineyards in Chablis. Located on a southeast-facing slope, the vineyard receives optimal sun, giving the wines extra depth and ripeness without losing freshness.
Vinification
The grapes are pressed gently and fermented under temperature-controlled conditions. A portion of the wine is aged in steel tanks to preserve freshness, while a smaller percentage is aged in oak for complexity. Fermentation takes place at approximately 18°C, followed by malolactic fermentation and filtration before bottling.
