2018/20 Amarone Classico, La Poiane, Bolla

HARVEST Grapes are harvested by hand in the Valpolicella Classica vineyards, beginning in midSeptember when the clusters are perfectly ripe, and immediately delivered to the fruttaio (drying room). Grapes selected for Amarone vary between 35 and 40% of the total grape production for each vineyard.
WINEMAKING METHOD From January the dried grapes are de-stemmed and crushed, then moved to the fermenting vats. Alcoholic fermentation is carried out at a controlled temperature and maceration is managed with the aim of preserving the fruitiness of the grape alongside an intense but controlled extraction of tannins. Malolactic fermentation takes place partly in small wooden barrels and partly in 4,000-litre casks.
AGEING The wine ages for 24 months partly in small, first-passage French and American oak barrels, partly in Slavonian oak barrels. The wine then spends at least 3 months in the bottle before going on sale.
SENSORY PROFILE Intense ruby red colour. Wild berries and cherry stand out on the nose. Dominant fruity and spicy notes on the palate with a long and lingering finish. ABV 15.00%.
AGING POTENTIAL 10 years in bottle laid down in a dark place, at the right temperature and humidity.
FOOD PAIRING Roasts and grilled meat, game, braised and stewed meat. Rich, flavoursome starters. The key ingredient in one of the Verona district's most refined recipes, risotto all'Amarone.
