Denne Chablis er lavet på Chardonnay-druer fra vinstokkene i Fleys ved floden Serein, på det klassiske Kimmeridgian-jurassic terroir. Vinen er vinificeret med hele klaser, fermenteret i ståltank og lagret i 228 l burgunderfade i 48 måneder med spontan gæring, uden omrøring og uden svovltilsætning.
Farven er dyb gylden. Duften er først lidt lukket, men folder sig ud med noter af smør, brioche, honning og et strejf af skovbund og tørret frugt.
Terrine af foie gras, homard à l’armoricaine eller andre rige og fedmefulde retter, hvor vinens struktur og dybde kommer til sin ret.
