Nose
The wine opens with a complex and aromatic nose characterized by dark berries such as blackberry and blueberry, flanked by floral notes like lavender and violet. In addition, there are fine nuances of freshly ground black pepper, licorice, smoked meat, and underlying hints of leather and herbs, which together create an alluring and balanced bouquet.
Palate
The palate is intense and structured with impressive depth. The fruit appears ripe and concentrated with notes of dark forest berries, supported by well-integrated spices and a vibrant acidity that adds freshness and tension. The tannins are firm yet silky, and the finish is long, persistent, and marked by minerality and light smoke.
Terroir & Vinification
John Sebastiano Vineyard is located in the eastern part of Sta. Rita Hills – one of California’s coolest and most wind-swept areas. This climate extends the ripening period and preserves the grapes' natural acidity, resulting in wines with high aromatic complexity and finesse. The wine is aged in French oak barrels, a portion of which are new, which contribute structure and subtle spice without dominating the wine's fruity character.
Serving & Food Pairing
This Syrah pairs perfectly with flavorful and spiced dishes featuring dark meat such as lamb, beef, and game. It is also well-suited for stews and mature cheeses. Serve at 16–18°C and ideally decant before serving.
