For more than ten generations, the Díaz Bayo family has been dedicated to their cultivation of the vineyard and preparation of wine in Ribero del Duero.
Up until 40 years ago, the preparation was carried out in stone presses, where the grapes were deposited for later pressing and placed on wooden barrels in the underground cellars, where the wine achieved the character known from the area at a constant temperature.
The climate in the area is considered an area with low moderate rainfall, long, cold winters, dry summers and significant temperature variations between different seasons and between day and night - especially in summer, which coincides with the ripening of the grapes.
The cultivation of the grapes for Diaz Bayo is carried out under the guidelines for organic farming. The Diaz Bayo family carries out production with great respect for the vineyard and nature without chemical treatments or artificial fertilizers and only uses organic fertilizers.
