Lelouvier Cidre Brut (4,5% alc.) er udarbejdet ved hjælp af talrige æblecidersorter - over 50 sorter bruges ofte. Bitre æbler giver struktur og krop til cider, søde varianter bringer aromaer, hvorimod syrlige æbler giver friskhed og delikatesse.
Når æblerne er modne, knuses æbler før de presses for at udtrække juice som gærer op til lidt over 4 % ABV. Under fermenteringen muliggør temperaturkontrol samt flere omstikninger en langsom og aromatisk gæring. Cideren bliver derefter aftappet under tryk.
